More food for thought by Sneha Singhi Upadhaya

    ‘A cakeless world would be a sad world’, celebrity chef Sneha Singhi Upadhaya was wary of this, at the age of 7 and thence, the amateur baker in her knew what is it that she’d wanna be when she grows up. A little after she was done with school, Chef Singhi left for Le Cordon Bleu, Paris, and the miraculous mix of fare flair and flavor that is Sneha, took flight and she has never looked back since.

    Furthermore, it was working at Pierre Herme in Paris and Laduree in London that varnished her already brimming culinary skillset. Chef Singhi, though, says “Going back to my roots was very important.” and it was therefore that she decided to gift the City of Joy Paris café and Le Studios, thus Kolkata’s curry met French crèmes and it’s all been sparks and flames ever since. The BBC Pastry Chef of the Year and The East India, Young Restaurateur of the Year was one of the selected few to be chosen to host Goût de France 2015 in Kolkata and worked alongside 3-Michelin-starred chef Alain Ducasse.

    Chef Singhi apotheosizes her mother and says she owes her for “the creative gene”. From macaroons, eclairs, red-velvet cupcakes, and pancakes to a range of bread; from ‘Dream Come True’ a chef’s bona fide rainbow cake to chocolate fudge, red-velvet cheesecake, and spinach crepe with cheese sauce Chef Singhi’s patisserie is no less than a laboratory and radical as she is, Singhi’s café’s menu changes every fortnight, and her adventures and experiments with food have made her name synonymous with words like the prodigious baker, menu designer, food counselor, chef, entrepreneur, and food-revolutionary. Her pastry perfection and flair for fondant has had her cakes making on-screen appearances with stars like Ranbir Kapoor, Alia Bhatt, Varun Dhawan, Katrina Kaif and Hrithik Roshan. The golden feathers to her toque though are sharing kitchens with famous chefs like Sanjeev Kapoor, David Rocco, and Pierre Herme.

    Sneha also hosted her own show called Bake diaries that aired on Food Food. The star baker who got hitched recently made headlines when she chauffered beau, Saugat Upadhyay, straight up from the Vidai ceremony. The revolutionary and creative rebel in chef Singhi would never let her life run out of colors and while the 28 years old has achieved what can only be called an exceptional level of success, as Rabindra Nath Tagore would say her tireless striving still stretches its arms towards perfection.
